Vegetarian Meatloaf
1 cup barley
1/2 cup rice
1/3 cup dry oatmeal
1 cup black beans
1 chopped onion
4 cloves of garlic
7 kale leaves
1 cup celery
1 pound of carrots
1 can of pumpkin
1 cup mushroom
2 pieces of whole wheat bread
italian bread crumbs
2 eggs

half a bottle of light catalina dressing
1 cup Apricot Preserves
1/4 cup water
(optional 1/3 cup bbq sauce)

cook barley, beans, and rice ahead of time. I also cook my onion, carrots, kale, and celery, this is just a preference .
add all ingredients plus salt, pepper, etc in mixing bowl, mix well.
grease two meatloaf pans with Pam. Preheat oven at 350. Cook meatloaf for about 25 min.
Then take out of oven and put the sauce on it. Put back in over for about 10 min. Let it cool on oven rack, eat the hell outta it!!!
Also to save time, you can make the mix ahead of time and keep in fridge for up to two days! Just cover it well!
